Thai Hummus

This is a unique hummus loaded with all of the beautiful flavors of Thai. The Tahini is replaced with peanut butter which really gives it that creamy nutty taste that makes this dish special. This extra creamy hummus is slightly spicy and a tad bit sweet. It’s unique and delicious!!


Prep Time: 15 minutes

Cook Time: 0 minutes

Yields: 4 servings


Ingredients:


One-15 ounce can chickpeas, drained and rinsed

3 tablespoons all natural peanut butter

1 tablespoons Sriracha (more or less depending on spice preference)

2 teaspoons green curry paste, I use the brand "Thai Kitchen"

1 tablespoon ginger paste

2 cloves garlic cloves

¼ cup fresh basil

1 tablespoon maple syrup

3 tablespoons lime juice

½ teaspoon sea salt

1-3 tablespoons water if a thinner consistency is preferred

3 green onions, chopped


Directions:

  1. Add all the ingredients, except the water and green onions, to a food processor and blend until smooth and creamy. If the consistency is too thick, you can add a tablespoon of water at a time and continue adding until you find your desired consistency. Fold in the green onions last and serve.
