Sweet Potato Spice Muffins

These moist and tender muffins are a unique blend of spicy and sweet flavors. Chinese Five Spice is the perfect spice combination of cinnamon, ginger, cloves, star anise, and fennel seeds, making it a wonderful addition to quick breads and cakes. The sweet potatoes and almond butter give these special muffins a moist and tender texture.

Yields: 6 large muffins or 12 medium muffins

Streusel Topping: (Optional)

¼ cup rolled oats

¼ cup walnuts

2 tablespoons coconut sugar

1 teaspoon cinnamon

Wet Ingredients:

1 cup mashed sweet potatoes

¼ cup almond butter

1 1/2 cup plant-based milk

¼ cup maple syrup

1 teaspoon pure vanilla extract

1 tablespoon apple cider vinegar

Dry Ingredients:

2 cups white whole wheat flour

1 teaspoons baking powder

1/2 teaspoons baking soda

1 tablespoon Chinese five spice powder

½ teaspoon sea salt

1 cup golden raisins


  1. Preheat oven to 375° degrees.

  2. In a food processor, pulse the streusel ingredients until a grainy mixture forms. Set aside.

  3. Place the wet ingredients: sweet potatoes, almond butter, milk, maple syrup, vanilla, and vinegar into a blender and blend until smooth and creamy.

  4. In a large bowl, thoroughly combine the dry ingredients: flour, baking soda, baking powder, Chinese five spice, salt, and raisins.

  5. Add the wet mixture (from the blender) to the dry ingredients. Mix until combined being careful not to over mix. Over mixing will result in a tough texture.

  6. Place in a non-stick muffin tin and top with the (optional) streusel topping.

  7. Bake for 20-30 minutes or until a toothpick comes out clean.

Chinese Five Spice

You can easily make your own Chinese Five Spice if you don't want to invest in a spice you've never tried or used. This is a special spice that you might not find yourself using often, so creating your own blend is the perfect solution. It's easy to get hooked on this aromatic spice!

Yields: 2-3 tablespoons

1 teaspoon ground cinnamon

1 teaspoon ground cloves

1 teaspoon ground fennel seeds

1/2 teaspoon ground black pepper

1 teaspoon ground star anise


1. Combine all of the ingredients and store in an airtight container.
