Sweet Peanut Burgers

This quick, easy recipe is loaded with sweet and spicy Thai flavors. The combination of sweet potatoes and peanut butter gives these burgers a beautiful texture and taste.

Yields: 4-6 burgers

Prep Time: 20 minutes

Cook Time: 25 minutes


1 tablespoon flax meal or chia seeds

2 tablespoons water

1-15 oz can chickpeas, rinsed and drained

1/2 cup shredded sweet potatoes

1/4 cups oats

3 tablespoons peanut butter, no added oils or sugars

1 teaspoon low sodium soy sauce

1 teaspoon ginger paste

1/2 teaspoon garlic powder

2 teaspoons rice vinegar

1 tablespoon lime juice

1 teaspoon sriracha

1/4 cup cilantro, chopped

Spicy Peanut Sauce

¼ cup all natural peanut butter

1 tablespoon low sodium soy or tamari sauce

1 tablespoon sriracha (1 teaspoon for a milder sauce)

1 tablespoon lime juice

2 teaspoon maple syrup

½ teaspoon garlic powder

1/4 cup water (add more or less depending on your preferred thickness)


  1. Preheat oven to 375°. Line a baking sheet with parchment paper.

  2. In a small bowl, mix together flax meal and water. Set aside to thicken.

  3. In a food processor pulse the chickpeas. Do not turn the beans into a paste; just coarsely chop them. (You can also mash them with a fork.) Transfer the chickpeas to a large mixing bowl.

  4. Add the flax mixture and all the remaining ingredients. Mix thoroughly with your hands. Form mixture into four to six equal patties and place them on the prepared baking sheet.

  5. Bake for 20-30 minutes, until golden brown.

  6. While the burgers are cooking, whisk together all the sauce ingredients and set aside. Top burgers with sauce and serve.
