Raw Pad Thai Zoodles

Zucchini makes perfect raw noodles for a beautiful, unique, and fun salad. The spicy peanut sauce is loaded with unique Pad Thai flavors including sweet, sour, and spicy flavors!

Yields: 4 servings

Prep Time: 20-30 minutes Cook Time: 0 minutes


Sauce:


2 tablespoons water

3 tablespoons lime juice

1 tablespoon rice vinegar

3 tablespoons low-sodium tamari sauce

1 tablespoon maple syrup

1/4 cup all-natural peanut butter

1-2 teaspoons Sriracha

1 teaspoon ginger paste

1 teaspoon garlic paste


Vegetables:


2 medium zucchini, spiralized

1 cup red cabbage, shredded or finely sliced

1 red or yellow pepper, sliced

1 carrot, shredded

4-6 green onions, sliced

1/3 cup cilantro, chopped

1/3 cup peanuts for garnishing, crushed or whole


Directions:


1. Place the sauce ingredients into a bowl and whisk until well combined.

2. Add the sauce ingredients to the vegetables and toss well. Garnish with peanuts.
