Pumpkin Pie Parfaits

A dessert parfait that tastes like pumpkin pie in a jar! This simple fall dessert is here just in time for Thanksgiving. I’m planning on skipping our traditional Thanksgiving pumpkin pie for this delicious creamy yogurt based parfait with the perfect amount of tang and sweetness. With a little planning, stock up on some plant-based yogurt, pumpkin butter, and fat-free granola for the perfect autumn dessert!!

Yields: 4 servings


2 cups unsweetened soy yogurt (or any plant-based yogurt)

2 cups pumpkin butter

1 ½ cups oil-free granola or muesli

1 teaspoon pumpkin pie spice


1. Using 4 half-pint sized mason jars or cups, alternate layers of yogurt, pumpkin butter, and granola until containers are filled to the top. Finish each parfait with granola and a sprinkling of pumpkin pie spice. Serve immediately for a crunchy texture.

Hints: Try replacing the pumpkin butter with another fruit topping such as Slow Cooker Apple Butter or Very Berry Chia Seed Jam. Get creative by adding your favorite dried fruits, nuts & seeds, and fresh or frozen fruits.
