This easy and quick Italian dressing is oil free and full of flavor.
Yields: 6 servings

1 cup low-sodium vegetable stock
1/4 cup red wine vinegar
1 tablespoon Dijon mustsard
1 1/2 teaspoon maple syrup or agave
3 garlic cloves, minced
1 teaspoon Italian Seasoning (more or less to taste)
1/4 teaspoon sea salt (or to taste)
1/4 teaspoon black pepper
1/8 teaspoon xanthan gum, or 1 teaspoon chia seeds
1. Place all the ingredients in a blender and blend on high speed for 5-10 seconds.
2. Add more xanthan gum or chia seeds if you like your dressing thicker. Xanthan gum requires only a pinch as a little goes a long way.
