Chocolate Power Bites

These are no-bake cookies that I refer to as "bites" because I make them small. They are naturally sweet from the dates and loaded with chocolate and walnuts. They taste like you're eating a candy bar without all the butter, sugar, and artificial flavors.

Yields: 24 bites
Prep Time: 15 Cook time: 0 minutes
Ingredients:
1 cup walnuts
1 cup medjool dates
1/4 cup unsweetened cocoa powder
1 teaspoon vanilla or coconut flavoring
1/4 cup unsweetened coconut flakes, for garnishing
Directions:
1. Line a 9 x 9 inch pan with parchment paper.
2. Place all ingredients except coconut flakes into a food processor and blend until a thick dough forms. You may need to add a small amount of water here if the consistency is too dry.
3. Press the chocolate mixture into the prepared pan.
4. Refrigerate for 1 hour.
Cut into 24 bites and serve. Garnish the tops of the bites with coconut flakes.
Kim’s Hints: You can also roll them into balls and coat them with coconut flakes. This is a bit more time consuming but very pretty!
