Caesar Dressing

A typical Caesar dressing calls for anchovies, which impart a slightly fishy flavor. I use seaweed instead, but if you don't like seaweed, simply leave it out and sub in fresh parsley or chives. You can find a similar recipe in The PlantPure Nation Cookbook, but this is an easier version since there is no sub-recipe for the Tofu-Cashew Mayonnaise.

Yields: 1 1/4 cups


2 tablespoons raw cashews

4 ounces extra-firm tofu

1/3-1/2 nori sheet, torn into small pieces

1/2 cup water

2 tablespoons apple cider vinegar

1 tablespoon low-sodium tamari sauce

2 teaspoons lemon juice

2 teaspoons Dijon mustard

2 teaspoons pure maple syrup

1 teaspoon nutritional yeast flakes

1 teaspoon garlic powder


  1. Combine all the ingredients in a high-powered blender and process until smooth. Store in an airtight container in the refrigerator for up to a week.
